Thanks for the quick reply. I actually have started implementing option #1 then thought maybe I should ask in case anyone had a better idea.
The reason I was not storing the changes in the WF container is, well, I'm not sure how to access it once the WF is complete and expose the results in our change log function module.
I'm sure there must be a way, but this seemed like the easy solution.
